For most organic food stains the marble institute recommends cleaning with a solution of 12 hydrogen peroxide and a few drops of ammonia. If you spilled anything oil based like a vinaigrette. You can use a soft liquid cleanser household detergent mineral spirits or ammonia to remove oil based stains from your marble surfaces.

You need to take care not to scratch it or expose it to acid such as vinegar or strong alkaline agents like ammonia and detergents. Wipe sudsy water on the counter with a soft cloth or sponge.
